Now let's go ahead and start with our dry ingredients. In a large bowl, mix:

  • 1 ½ cup whole grain flour
  • ½ teaspoon baking powder
  • ½ teaspoon of baking soda
  • ½ teaspoon of cinnamon, nutmeg and allspice

Give a quick stir and start working on ingredients wet in a separate bowl. In the wet ingredients bowl, mix together:

  • 2 eggs
  • 1 cup pumpkin puree
  • cinnamon 1/3 cup sauce
  • 3/4 cup maple syrup
  • 1 tablespoon vanilla extract

once the wet ingredients are distributed, add the contents of your bowl in your ingredients dry. Then mix ¼ cup chopped walnuts.
Stir together until everything is just combined. You can your hand blender or spatula. Pour the batter in muffin trays or silicone cups ?? and pop in the oven at 350 degrees for 30 minutes. You know they are done when you can stick a toothpick into the muffin and it comes out clean.

Now, personally, I like topping them with cheese pumpkin cream or whipped honey butter. It is especially great options if you want to get some extra calories in your diet.

Now, these muffins are obviously a less healthy choice than a large salad or vegetable dish steamed, but it is still a fun way to sneak a few extra fruits in your diet food.
